White Asparagus season is back in full swing!
The much anticipated weisser spargel (white asparagus) is BACK and we couldn't be more excited to share it with you. For months and months we've been prodded with hopeful questions of when it would make it's return, and the time has come! Our white asparagus is from the great lands of Limbourg, Holland. It is AAA quality, which is the highest quality of the vegetable. White asparagus is no different from green asparagus, except for how it is farmed. While the asparagus is growing, it is covered in mulch and dark plastic so no sunlight reaches the plant. The lack of sunlight is what keeps the asparagus from turning green; no photosynthesis is taking place. The asparagus turns out a bit sweeter and denser than it's green cousin.
Traditionally, white asparagus is served with potatoes, hard boiled eggs, sliced ham, and butter. We are keeping with this tradition and staying modern. Along with potatoes and hard boiled eggs, you are welcome to add house-smoked salmon, sautéed morel mushrooms, black truffle shavings, and/or hollandaise. Our chef has also created a fantastic white asparagus soup that is creamy, rich, and a touch sweet. We have curated beautiful wine pairings to go with any and all of our spargel selections. To talk specifically about one pairing, we are featuring a Sauvignon Blanc from Deidesheim, Germany. The Von Winning is a creamier style Sauvignon Blanc that pairs perfect with the delicacy and butteriness of the spargel.
